Orris root refers to the root of the Florentine Iris plant; Botanical Name: (Iris Germanica florentina). It stabilises fragrances acting as a fixative and is found in the majority of medieval and renaissance pot pourri and pomanaders recipes. It helps the fragrant oils meld and sustain for a much longer period and is still used to day for the same purposes. It is also found in small quanitites in eastern culinary spice blends - essentially for the same reason - with a sweetish taste and slightly bitter aftertaste.
